Madrid’s gastronomy

One of the biggest attractions for tourists that visit Spain is the rich gastronomy that the country offers. Every one of the 17 autonomous communities offer both traditional Spanish dishes as well as their own typical specialties. Needless to say, Madrid is renowned for the large amount of bars and restaurants that will surely please all types of customers. 

Here is a list of some of the more famous and renowned Madrid dishes that have stood the test of time and have adapted to modern tastes:

1. Cocido madrileño

First and foremost on the list is the popular Madrid chickpea stew. This dish is served in three turns, the first dish is a fine noodle soup, the second dish consists of chickpeas with a mixture of vegetables including cabbage, potato and carrot and the third dish being a mix of meat including chorizo, beef, black pudding and pork knuckle. This dish it is a must during the Autumn and winter months in Madrid! 

2. Callos a la madrileña

Another comforting Madrid dish, made with cow stomach stewed in tomato and paprika sauce and accompanied by blood sausage, chorizo, and ham. It is usually served in a traditional clay pot. A freshly baked piece of bread is essential for dipping in the delicious sauce.

3. Bocadillo de calamares

The most popular fast food in Madrid is the deep fried squid sandwich. Madrid is not near the coast but Spanish people always say that the freshest and best quality fish can be found in Madrid. There are lots of bars around the Plaza Mayor (main square) where you can enjoy this fast food delicacy. Enjoy!

4. Patatas bravas

The perfect dish to share with friends while having a “caña” (small glass of beer). Patatas bravas are small roast potatoes covered in spicy tomato sauce. There are competitions throughout the year to decide what bar or restaurant makes the best spicy potatoes. 

5. Pincho de tortilla

Another classic which can be ordered at breakfast or as part of lunchtime or dinner tapas is the pincho de tortilla. This dish is an omelette containing fried potatoes and sometimes onions also. A must you can’t miss, also perfect for vegetarians. 

6. Huevos rotos

This is a plate of fried potatoes in olive oil accompanied by fried eggs on top and a third ingredient that tends to be cured ham (either Ibérico or Serrano) or other types of meat such as chorizo. This plate is very simple but super tasty too!
